Rare Bird Distillery occupies the Stable Block in Talbot Yard, a Grade II listed former coaching stable in Malton that now houses a cluster of independent food and drink producers. Matt and Elizabeth Stewart founded the distillery in 2018 as Malton's first, after two years of trial batches on a small still at home, inspired by a visit to a Highland distillery. Production runs on a 300-litre copper still named Florence, turning out a London dry gin made with botanicals sourced locally where possible. The site combines the working still with a shop, a licensed bar and a gin school that runs hands-on distilling sessions for small groups on set days each week. Visitors can watch the still in operation, taste the range at the bar and take a bottle home from the shop. The business remains owned and run by its founders, with no other branches.
